Tofu Frikadellen

Tofu! Man, this stuff can do *anything*, right? I mean, you can grill it, bake it, stir-fry it… but have you ever had it German-style? I’m talking Tofu Frikadellen, folks! Little patties of savory goodness, perfect with a mountain of creamy mashed potatoes. Trust me, it’s a game changer.

I first tried these Tofu Frikadellen years ago on a trip to Berlin. Wandered into this tiny little *Kneipe* (that’s a pub!), and they were serving them up. One bite, and I was hooked! So, I did what any self-respecting home cook would do – I begged the chef for the recipe. Well, *sort of* begged. He gave me the general idea, and I’ve been tweaking it ever since.

Now, I’m no professional chef, just a gal who loves good food. But I’ve made these Tofu Frikadellen *hundreds* of times, experimenting with different spices and techniques. And honestly? I think I’ve cracked the code. Get ready for the best Tofu Frikadellen you’ve ever tasted!

Tofu Frikadellen - detail 1

Why You’ll Love These Tofu Frikadellen

Okay, so why *should* you make these Tofu Frikadellen? Let me tell ya! They’re seriously awesome, and here’s why:

  • Super quick to whip up!
  • Easy on the wallet – hello, budget-friendly dinner!
  • A ridiculously tasty way to skip the meat.
  • You can totally play around with the spices.
  • Seriously filling and comforting.

Quick and Easy Tofu Frikadellen

Seriously, I’m talking weeknight dinner *fast*. You can have these on the table in under an hour. Boom!

Budget-Friendly Tofu Frikadellen

Tofu is cheap, veggies are cheap… basically, you’re saving money *and* eating well. Win-win!

Delicious Vegetarian Option: Tofu Frikadellen

Forget boring veggie burgers! These Tofu Frikadellen are packed with flavor and have a great texture.

Ingredients for Tofu Frikadellen

Alright, let’s talk ingredients! You’ll need:

  • About 200g of firm tofu – make sure you press it to get rid of extra water, then crumble it up!
  • 100g of carrots, peeled and grated super fine.
  • Two scallions, thinly sliced.
  • Half a bunch of fresh parsley, chopped up nice and small.
  • Two large eggs – gotta bind it all together!
  • 100g of *fine* rolled oats. Not the chunky kind!
  • A tablespoon of lemon juice – brightens everything up.
  • Two teaspoons of Dijon mustard – adds a little zing!
  • Two teaspoons of tomato paste – for that umami goodness.
  • Half a teaspoon of ground cumin – trust me on this one!
  • Salt and pepper, to taste. You know the drill!
  • Two tablespoons of rapeseed oil for frying.
  • And for the mashed potatoes: 1000g of potatoes (Russet or Yukon Gold work great!), 200ml of milk (I use 1.5% fat), and some freshly grated nutmeg. Yum!

How to Prepare Delicious Tofu Frikadellen: Step-by-Step Instructions

Okay, ready to get cooking? Don’t worry, it’s easier than you think! Just follow these steps, and you’ll be chowing down on some amazing Tofu Frikadellen in no time.

Preparing the Tofu Frikadellen Mixture

First, crumble that tofu into a bowl. Make sure you pressed it *good* to get rid of all that extra water – nobody wants soggy Frikadellen! Then, toss in your grated carrots, sliced scallions, and chopped parsley. It’s gonna look colorful and smell amazing already!

Forming and Frying the Perfect Tofu Frikadellen

Now, wet your hands a little – this helps keep the mixture from sticking. Grab a handful of the tofu mixture and form it into a patty. Aim for about 3 inches across. Repeat until you’ve used up all the mixture. Don’t worry if they’re not perfect, rustic is good!

Next, heat up your rapeseed oil in a pan over medium heat. You want it hot, but not *smoking* hot, or you’ll burn those babies! Carefully place the Tofu Frikadellen in the pan, making sure not to overcrowd it. Cook for about 3-5 minutes per side, until they’re golden brown and crispy. The key is medium heat! Too high and they burn, too low and they get sad and greasy.

Making Creamy Mashed Potatoes to Accompany Your Tofu Frikadellen

While those Tofu Frikadellen are sizzling away, let’s get the mashed potatoes going! Peel and quarter your potatoes, then throw them in a pot of salted water. Bring it to a boil and cook until they’re fork-tender – about 15-20 minutes.

Drain the potatoes and put them back in the pot. Add your milk, salt, pepper, and a generous grating of nutmeg. Now, mash away! If you want *extra* smooth mashed potatoes, use a potato ricer. Trust me, it’s worth it!

Tips for the Best Tofu Frikadellen

Okay, so you wanna make these Tofu Frikadellen *amazing*, right? Of course you do! Here are a few little tricks I’ve learned along the way:

  • Don’t cram too many Frikadellen in the pan at once! Give ‚em some space so they can get nice and crispy.
  • Seriously, use fresh herbs! Dried herbs just don’t have the same oomph.
  • Don’t be afraid to tweak the seasonings! Taste the mixture before you start frying and add more salt, pepper, or cumin if you think it needs it.
  • Let the mixture sit for about 10 minutes before you start forming the Frikadellen. This gives the oats a chance to soak up some of the moisture and helps them bind together better.
  • A non-stick pan is your friend! It’ll make flipping those Frikadellen a breeze.

Ingredient Notes and Tofu Frikadellen Substitutions

Okay, so maybe you’re missing an ingredient or two? No worries! Here are some swaps you can make:

  • Going vegan? No problem! Just use a flax egg instead of a regular egg. Mix a tablespoon of ground flaxseed with three tablespoons of water, let it sit for five minutes, and *bam*, vegan egg!
  • Out of oats? Breadcrumbs will work in a pinch.
  • Don’t have Dijon mustard? Any kind of mustard will add a nice flavor.
  • Feel free to play around with the herbs! Thyme, rosemary, even a little bit of chili flakes can add a fun twist.

Serving Suggestions for Your Tofu Frikadellen

Alright, you’ve got your Tofu Frikadellen and your creamy mashed potatoes… now what? Well, here are a few of my favorite things to serve alongside ‚em:

  • A big ol‘ fresh green salad – gotta get those veggies in!
  • A dollop of sour cream (or vegan sour cream if you’re keeping it plant-based).
  • Some steamed green beans or asparagus – simple and delicious.
  • A simple tomato sauce. Seriously, just simmer some crushed tomatoes with garlic and herbs. It’s *chef’s kiss*!

Storing and Reheating Your Tofu Frikadellen

Got leftovers? Lucky you! These Tofu Frikadellen are just as tasty the next day. Pop ‚em in an airtight container and they’ll keep in the fridge for up to three days.

To reheat, you can either pan-fry them again for a few minutes until they’re crispy (my fave!), or just nuke ‚em in the microwave if you’re in a hurry. Just don’t overdo it, or they’ll get rubbery!

Frequently Asked Questions About Tofu Frikadellen

Got questions? I’ve got answers! Here are some of the most common things people ask me about these Tofu Frikadellen:

Can I make Tofu Frikadellen ahead of time?

Absolutely! You can totally prep the mixture in advance. Just pop it in the fridge in a sealed container, and it’ll be good to go for up to 24 hours. Makes weeknight dinners even *easier*!

Are Tofu Frikadellen suitable for freezing?

Yep! Cooked Tofu Frikadellen freeze like a charm. Just let them cool completely, then wrap them individually in plastic wrap (or pop them in a freezer bag), and they’ll keep for up to two months. Just thaw ‚em in the fridge before reheating.

Can I bake the Tofu Frikadellen instead of frying them?

You betcha! If you’re trying to cut down on oil, baking is a great option. Just preheat your oven to 180°C (that’s 350°F), pop the Tofu Frikadellen on a baking sheet, and bake for about 20-25 minutes, flipping them halfway through. They won’t be quite as crispy as the fried ones, but they’ll still be delicious!
